About

Since 1988, Vermeer has been a place where craftsmanship, creativity, and quiet care meet. Under the direction of Chef Sebastian Baquero Garces, we continue to evolve — not through trends, but through thoughtful refinement. We cook with intention: food with depth, clarity, and a sense of origin.

Each ingredient is chosen for its season, its story, and its natural character. We work in rhythm with nature and with the producers who bring us the best of what the land has to offer. Sustainability is not our message — it is simply our way of working.

Service is warm, the atmosphere relaxed. Whether you’re here for a full menu or a glass of wine with a few carefully prepared bites in Vermeers Wijnkamer, you are welcomed with quiet hospitality.

The wine program, led by sommelier Dannis Apeldoorn, is intuitive and precise — each pairing designed to support the dish, never to distract from it.

At Vermeer, dining becomes a dialogue — between simplicity and depth, between craft and comfort.

Vermeers Wijnkamer is a calm and elegant space tucked within NH Collection Amsterdam Barbizon Palace — a quiet extension of Restaurant Vermeer. Once the home of Bottles & Jars, this intimate room now invites you to enjoy a glass of exceptional wine, no reservation required.

Curated by Chef Sebastian Baquero Garces and sommelier Dannis Apeldoorn, the Wijnkamer reflects the same attention to detail and understated quality found in the restaurant itself.

A changing selection of wines is served by the glass, paired with small, refined bites drawn from Vermeer’s seasonal kitchen.

Vermeers Wijnkamer is open daily from 16:00 to 00:00, and on Fridays and Saturdays until 01:00.
