Since 1988, Vermeer has been a place where craftsmanship, creativity and calm come together. Under the direction of chef Sebastian Baquero Garces, the restaurant continues to grow — not by following trends, but through refinement and thoughtful choices. The kitchen is rooted in classic French cuisine: elegant and refined, combined with modern techniques and a strong focus on Dutch ingredients.
The menu is built around three elements: the sea, the land, and the earth. Local products and natural ingredients take centre stage, in close cooperation with small producers. This way, Vermeer highlights the richness of the Netherlands — both on the plate and in the story behind it.
Sustainability is part of everything we do: from seasonal cooking and organic products to working with farmers and fishermen who respect nature and animals. It’s not a statement — it’s simply how we work.
Throughout the menu, guests taste the purest flavours, textures and aromas. Kemper chicken raised outdoors, oysters from the Oosterschelde, fish caught by hand — each ingredient chosen with care.
This philosophy is also reflected in the interior. The colours and tones are inspired by nature, the plates by craftsmanship, and the lighting by the paintings of Johannes Vermeer — where light highlights one small detail and creates focus and calm.

Vermeers Wijnkamer is a calm and elegant space tucked within NH Collection Amsterdam Barbizon Palace — a quiet extension of Restaurant Vermeer. Once the home of Bottles & Jars, this intimate room now invites you to enjoy a glass of exceptional wine, no reservation required.
Curated by Chef Sebastian Baquero Garces and sommelier Dannis Apeldoorn, the Wijnkamer reflects the same attention to detail and understated quality found in the restaurant itself.
A changing selection of wines is served by the glass, paired with small, refined bites drawn from Vermeer’s seasonal kitchen.
Vermeers Wijnkamer is open daily from 16:00 to 00:00, and on Fridays and Saturdays until 01:00.
